Banana Rum Cupcakes

Such an easy recipe that makes 16 cupcakes at just 2 Weight Watcher points each. These are the perfect snack, breakfast, or any time of the day treat! Want to try Weight Watchers for a month FREE?


  • 2 Large Bananas
  • 2 C. Carbquick
  • 1/2 C. old-fashioned rolled oats
  • 1/4 tsp salt
  • 2 tsp aluminum-free baking powder
  • 1 tsp baking soda
  • 3/4 C. Xylitol (or your preferred sweetener)
  • 1 C. non-fat Greek yogurt
  • 4 Eggs
  • 1 tsp. vanilla extract
  • 1 tsp. rum extract

Preheat oven to 350′. Mix all ingredients in a blender until smooth. Pour into cupcake liners. Bake until tops are golden brown. Let cool and enjoy!
