- 2 Large Bananas
- 2 C. Carbquick
- 1/2 C. old-fashioned rolled oats
- 1/4 tsp salt
- 2 tsp aluminum-free baking powder
- 1 tsp baking soda
- 3/4 C. Xylitol (or your preferred sweetener)
- 1 C. non-fat Greek yogurt
- 4 Eggs
- 1 tsp. vanilla extract
- 1 tsp. rum extract
Preheat oven to 350′. Mix all ingredients in a blender until smooth. Pour into cupcake liners. Bake until tops are golden brown. Let cool and enjoy!
