Similar to the old fashioned haystack candies, this sweet sugar-free treat will cure the strongest craving your sweet tooth has on you. It’s a salty and sweet delight!
This recipe was shared from my friend Stephanie Huffman.
- 3/4 C. Lily’s Butterscotch Mini Chips
- 1/4 C. Chunky Peanut butter
- 1 1/2 C. Salted Peanuts
In a microwave safe bowl, melt the butterscotch chips and peanut butter. Start with 30 seconds, stir and then heat another 30 seconds if needed.
Mix in peanuts, stirring well to coat all nuts.
On a parchment lined pan, scoop out clusters of nuts. Use a tablespoon for uniform clusters. Refrigerate till firm. Remove from pan and store in an airtight container. I keep mine refrigerated.
This recipe will make approximately 28 clusters. My ingredients totaled 45 net carbs for the entire recipe. Each candy piece would be 1.6 net carbs. They are very rich! Having 2 pieces is perfect!
