Just because you can’t have the common corn chip, it doesn’t mean you can’t enjoy queso. You can serve this on top of your fajita meat with low carb tortillas, or eat with home-made “chips” made from low-carb tortillas. It’s a great dip for pepperoni “chips” too! What about serving with Pork Skins? Ever made Bacon Knots? These would be great for dipping! Serve atop a Mexican salad!
- 1 lb. White American Cheese, from the deli
- 8 oz. Cream Cheese
- 2 T. Butter
- 4 oz. Green Chilies, diced and NOT drained
Cut your white American cheese and cream cheese into chunks. Add them to your slow cooker or pot. Add your green chilies with juice. Add the butter. Cook on low for 2-5 hours or until melted.
