Weight Watchers Banana Pancakes

At just 2 points, you’ll get a hefty serving of pancakes for one. Not too sweet, but full of flavor.

  • 1/3 C Carbquick
  • 1 egg
  • 1 banana
  • 1 T Xylitol
  • 1 tsp Baking Powder
  • 1 tsp Vanilla extract
  • 1/4 tsp Cinnamon (optional)

Blend ingredients in a blender, or a magic bullet. In a non-stick skillet, spray with a butter spray and heat to medium heat. Pour in pancake batter to a size that you prefer. Let one side come to a golden brown. Flip and brown. Repeat till all batter is used. Serve with Log Cabin sugar free syrup. Enjoy!
