3 Ingredient Peanut Butter Cookies

I’m still confused on how these three ingredients come together to make this scrumptious Keto/Low Carb cookie, but I’m thankful it works.

  • 2 Eggs
  • 1 C. Xylitol
  • 2 C. Crunchy Peanut Butter (pick a low carb)

Mix all ingredients. Scoop out onto a cooking mat. Using a hot wet fork, press each cookie into a flattened cookie with a criss cross design. Bake for 12 minutes in a 350 degree oven, preheated of course. Once done, let them cool completely. These cookies are actually better the next day and continue to get better day after day.

Makes 24 cookies. Approximately 1 net carb per cookie, if your peanut butter is 6 carbs per 2 T.
