I’m in the kitchen whipping up breakfast for dinner. My husband comes in the kitchen and sees the waffle iron heating up. He asks, “what are you cooking”. I’m like….”waffles”. LOL He is puzzled on how this is even possible knowing we are all strictly eating low carb/keto. I kidding-ly told him I have magical skills. In all honesty, I got this recipe from my sister. We tweaked the original recipe, thus this blog post.
- 1 C Almond Flour
- 1/2 T. Baking Powder
- 1/4 tsp. Salt
- 1 C. Heavy Whipping Cream
- 2 T. Oil, if needed for waffle iron
- 3 Eggs
- 1/4 tsp. cinnamon
- 2 T. Xylitol
Easiest recipe ever. You mix all of the ingredients, except the oil. Heat up your waffle iron. Use the oil as necessary in your hot iron. Pour on batter. This recipe makes 8 waffle squares. A set of 2 squares would give you about 308 calories, 5.4g carbs with 1.8g. fiber. This is just around 3.6g net carbs. Use these to make breakfast sandwiches! So good, you don’t need syrup. If you so desire, top with a few berries and keto cool whip, or spread with peanut butter. I liked them plain!
