I love how a recipe comes together. After buying a set of single serve microwave cake pans from Aldi’s, I took the included recipe and made it KETO friendly. It was perfect! This recipe makes 2 servings and comes in around 3 net carbs each. You’ll need to add up the carbs for your ingredients.
Cake Batter:
- 2 T. Butter, melted
- 1/4 C. Carbquick
- 1 Large Egg
- 2 T. Xylitol, or your choice of sugar substitute
- 1 T. Heavy Whipping Cream
- 1 tsp. Cake Batter Flavoring
- 1/4 tsp. Baking Powder
Optional Icing:
- 2 T. Cream Cheese, softened
- 1 T. Xylitol
- Dash of Vanilla Flavoring
- 1 T. Heavy Whipping Cream
Optional Toppings:
- Berries
- Sugar free mini chocolate chips
Mix the cake ingredients. Pour 1/2 of the mixture into a greased microwave safe dish. You could use a coffee cup. Microwave for 1 minute. Let it cool for 1 minute before removing from dish.
Mix the ingredients for the icing. Drizzle on top of your cake.
Top with berries or sugar free chocolate.
