KETO Churro Chaffle

A sweet treat, or for breakfast, these KETO Churro Chaffles are sure to please.

Chaffle:

  • 1 Large Egg

  • 3/4 C. Mozzarella Cheese, shredded

  • 2 T. Carbquick, or Almond Flour

  • 1/2 T. Butter, melted

  • 2 T. Xylitol

  • 1/2 tsp. Cinnamon

  • 1/2 tsp. Vanilla Flavoring

  • 1/4 tsp Baking Powder

Topping:

  • 1 T. Butter, melted

  • 1/4 C. Xylitol

  • 3/4 tsp. Cinnamon

Icing for dipping:

  • 2 T. Cream Cheese
  • 2 tsp. Xylitol
  • 1/8 tsp. Vanilla Flavoring
  • 1 tsp. Heavy Whipping Cream

Preheat your mini dash waffle iron. In a bowl, mix your Chaffle ingredients.Pour half of the mixture into your waffle iron. Let it cook for 3-4 minutes. Steam will start to diminish when Chaffle is close to being done. Remove Chaffle and set aside. Cook 2 more Chaffles. Cut Chaffles into strips.

For the topping, toss Chaffle strips in a bowl of the melted butter. Next, mix the topping cinnamon and xylitol in a bowl. Toss this mixture with the buttered chaffles to coat. Enjoy your chaffles as is, or continue this recipe for an icing for dipping!

If you want a dipping sauce, melt the cream cheese in a microwave safe bowl for 20-30 seconds till creamy. Add remaining ingredients for the icing and mix well.
