This Weight Watchers (2 points) and keto friendly recipe will curb a sweet tooth in about 3 minutes start to finish!
First, mix dry ingredients:
In a separate bowl, mix the wet ingredients:
- 1 egg
- 1 T non fat Greek yogurt (or heavy whipping cream)
- 2 T lemon juice
- Optional: 2 drops of lemon essential oil approved for internal use
Mix dry and wet together and stir well.
Spray a microwave safe mug with non stick spray. Pour in batter. Microwave for 50 seconds. Let cool slightly and enjoy.
Optional topping: powdered sugar substitute plus a little lemon juice. Drizzle on top.
