Lemon Poppyseed Mug Cake

This Weight Watchers (2 points) and keto friendly recipe will curb a sweet tooth in about 3 minutes start to finish!

First, mix dry ingredients:

  • 3 T Carbquick
  • 1 tsp Poppyseeds
  • 1/2 tsp Baking Powder
  • 2 T Xylitol or your favorite sweetener

In a separate bowl, mix the wet ingredients:

  • 1 egg
  • 1 T non fat Greek yogurt (or heavy whipping cream)
  • 2 T lemon juice
  • Optional: 2 drops of lemon essential oil approved for internal use

Mix dry and wet together and stir well.

Spray a microwave safe mug with non stick spray. Pour in batter. Microwave for 50 seconds. Let cool slightly and enjoy.

Optional topping: powdered sugar substitute plus a little lemon juice. Drizzle on top.
