A favorite comforting food is a cinnamon roll. You’ll be glad to have this recipe that is KETO-fied and microwavable. From the reviews, this taste like the cinnamon cake from Starbucks and I hear that is a good thing!
Cake Ingredients:
- 1 T. Butter, melted
- 1/4 C. Carbquick (my preference) OR Almond Flour (fine)
- 1/4 C. Xylitol
- 1/4 tsp. Baking Powder
- 2 T. Heavy Whipping Cream
- 1 Egg
Filling Ingredients:
- 1 T. Butter, melted
- 1 T. Xyltiol
- 1/4 tsp. Cinnamon
Topping Ingredients:
- 2 T. Pecans, chopped
Grease your cake pans (or coffee cups) with a butter spray. Place 1 T. pecans in each pan. In a bowl, mix the filling ingredients. Pour a teaspoon of the mixture over the pecans for each pan. Reserve the rest. Mix all of the cake ingredients. Pour 1/2 of the mixture into one pan (coffee cup) and the rest in the other. Pour the remaining filling ingredients over the batter, half of what’s left for each one. Take a toothpick and swirl the filling into the batter. Microwave each one at a time for 45 seconds. Let it cool for atleast 1 minute before turning out onto a plate. Cook the other cake.
Top with a cream cheese frosting, or top with whipped topping. They are honestly great just like they are! ENJOY!
