KETO Crockpot Chicken Crack
This KETO friendly and low carb is addicting. The entire family will love this creamy, cheesy chicken dish. Again, I love to use my Instant Pot to make this one dish meal effortless! You can use a crock pot if you prefer. How many carbs? Minimal- what ever is in your cheeses!
- 1/2 C. Chicken Broth
- 1 pkg, Hidden Valley Ranch Seasoning
- 2 lbs. of Chicken Breasts
- 8 oz. package of Cream Cheese, cut into chunks
- 8 slices Bacon, cooked and crumbled
- 1/2 C. Shredded Cheddar Cheese
In your Instant Pot, add chicken broth, stirring in the Hidden Valley Ranch seasoning packet. Add chicken breasts. Seal lid and cook on low pressure for approx. 6 hours. If you prefer, you can cook on high pressure for 15 minutes. After the cook time has ended, shred the chicken with two forks. Add chunks of Cream Cheese, bacon and shredded cheddar. Stir well. Cover again and cook for an additional 5-10 minutes, until the cream cheese has melted.
Serve with a salad or KETO approved sides of your choice. YUM! Makes for amazing left overs as well. Consider using in a low-carb tortilla for an amazing quesadilla (simply add butter to outside of the filled tortilla and toast in a skillet).
