Nothing is more comforting than a warm meal that includes gravy. What makes this meal even better is that it is very economical, feeds many, and is quick! It’s only 3 carbs per serving. Be sure to always add up your specific ingredients and their nutritional counts.
Start by visiting your local Costco (or possibly Sam’s). Pick up the sliced roast beef for about $10. It’s a very hearty package of quality beef! It’s already “ready to eat”, so no major cooking. Just heating and prepping other ingredients. If you do not have those stores in your area, you can use a cooked roast, or get roast beef sliced in a deli. Do not get it cut too thin, or it will be dry and will fall apart.
- 1+ lb. Seasoned Roast Beef, cut into strips
- Green Bell Pepper
- Red Bell Pepper
- Onion
- Mushrooms, diced or sliced
- 2-4 T Butter
- Keto Bread, I use Lewis from Walmart
- Seasoning, Greek or Italian
- Salt and Pepper, to taste
- Brown Gravy Mix and water
- Shredded or sliced cheese- provolone or Swiss is great with this meal
In a large non stick skillet, sauté your onions and peppers in some of the butter. Salt and pepper. Add seasoning. In another skillet, sauté the mushrooms in the remaining butter. Be sure to not crowd your mushrooms. They’ll cook more evenly. In the onion and pepper pan, move the veggies to one side and add the beef to the other side to heat. Keep on low and do not overcook or your beef will be dry. In a small boiler, cook your brown gravy according to the directions. Toast your bread- 1-2 slices for each person. It’s very filling so you may want to start with just one piece of toast. Lay toast out on each plate. Layer the ingredients- beef, onions and peppers, gravy, mushrooms, and then cheese. Serve open faced and eat with a fork. Delish!
