Need a little spice in your life, or atleast something to add pizazz in your KETO menu? This Jalapeño Popper Chaffle can be a part of many meal options. You could use it for the base of a chicken Chaffle sandwich, or top it with taco meat and related toppings. Serve it along side a protein of your choice. Fold in half for a taco shell.

1 oz Cream cheese

1 large Egg

1 C Cheddar cheese (shredded)

2 T. Bacon bits

1/2 T. Jalapenos

1/4 tsp. Baking Powder
Preheat your mini waffle iron for about 5 minutes, until hot. In a microwave safe dish, microwave (~15-30 seconds) the cream cheese until it’s soft and easy to stir. Stir in all other remaining ingredients (except toppings, if any). Pour enough of the chaffle batter into the waffle maker to cover the surface well- about 1/2 cup batter for a regular waffle maker and 1/4 cup for a mini waffle maker). Cook until browned and crispy, about 3-4 minutes. When the steam slows down, check for doneness. Carefully remove the chaffle from the waffle maker and set aside to cool and crisp up. Repeat with remaining batter, if any. ENJOY!
