Keto Meatloaf

Such a comfort food! Makes a great sandwich if there are leftovers, too! You’ll add this to your menu rotation!


Meatloaf Ingredients:

  • 1 1/2 lbs Ground Beef
  • 1/2 lb Ground Pork Sausage
  • 1 Medium Onion, finely chopped
  • 2 Large Eggs
  • 3 Garlic Cloves, minced
  • 3 T No Sugar Added Ketchup
  • 3 T Parsley
  • 3/4 C. Keto Breadcrumbs- I use one Lewis bun
  • 1/3 C. Heavy Whipping Cream
  • Splash of Worcestershire sauce
  • 1 ½ tsp. Salt
  • 1 ½ tsp. Italian seasoning
  • ¼ tsp. Black Pepper
  • ½ tsp. Paprika

Meatloaf Sauce Ingredients: 

  • 1/2 C. No Sugar Added Ketchup
  • 1 ½ tsp. White Vinegar
  • 2 ½ T Swerve Brown Sugar
  • 1 tsp. Garlic Powder
  • ½ tsp. Onion Powder
  • ¼ tsp. Black Pepper
  • Splash of Worcestershire sauce

Preheat oven to 375°.

In a bowl, mix up the ingredients for the meatloaf. I find that it is easier to mix thoroughly with my hands. Once mixed, placed the mixture into a loaf pan. I have a silicone loaf pan that I absolutely love. I place it inside of a Pyrex dish just in case it overflows with any juices and to easily place it in and out of the oven. Bake your meatloaf for 35 min. While cooking, mix up the topping ingredients. Add this to the top of the meatloaf after the 35 minutes have expired. Cook an additional 10 min. Remove from oven and drizzle some of the juices on top of the meatloaf. Let it cool for 5-10 min before serving. ENJOY!
